lemon pancakes with strawberry compote


We've officially finished Phase I of our new home makeover!  As it has taken us nearly every weekend since we got the house in December, it's seriously something to celebrate.  We've moved from a complete houseful of ugly walls, curtains, and floors to a house with mainly ugly walls, curtains, and floors, but now it's speckled with pretty walls, curtains, and floors.  The speckling of pretty makes the ugly so much more palatable. 


Now, we're bracing ourselves for Phase II, the Spring/Summer outdoor makeover project.  We've decided that the outdoor maintenance will officially make us grown-ups, since it'll be the first time ever we've had our own lawn in which to work and play.

I bet you're picturing Chookie Chookie Liz outside planting pretty flowers, maybe even a garden, as the warm sun shines down.  That's not so much the case.  It's not going to be nearly that glamorous (if yard work can be considered glamorous).  We're talking more like raking up 7 years' worth of acorns and dead leaves, filling in our Shrek-like swamp of a backyard, pulling out tons of stumps that were so kindly left for us in place of trees and bushes, and cutting up fallen tree branches for firewood.

Don't you want to join us?  I'll feed you.  Pancakes, chili, tacos, cupcakes...you name it, I'll make it!!


Lemon Pancakes
Makes about 16 pancakes

Ingredients:
  • 2 c white whole wheat flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 tbsp vegetable oil
  • 2 c milk
  • zest of one lemon
  • 2 tbsp fresh lemon juice
Mix the flour, sugar, baking soda and salt together in a large bowl.  Add the eggs, vegetable oil, milk, lemon zest and lemon juice and stir just until everything is combined.  Grill them up as you would any other pancake.


Strawberry Compote
Makes 2 cups

Ingredients:
  • 2 c strawberries (frozen or fresh), sliced
  • 1 tbsp sugar (more for a sweeter topping)
Combine the strawberries and sugar in a small saucepan.  Heat over medium heat, stirring often, until the compote begins to thicken.  Serve warm over the lemon pancakes.
