vegetarian pulled "pork" sandwiches


I know it's mid-February (Happy Birthday, Sister!) and this is really, really late.  But, better late than never, right?

New Years' Day in the Chookie Chookie family has always tasted like this...pulled pork sandwiches!  Since starting a vegetarian diet, it has been six long years of New Years' meals having to sadly watch my parents, sister, aunts, uncles and cousins enjoy the best part, the pulled pork that my grandma is so famous for.


That is, until this year.  My parents were having the New Years' Day meal at their house this year.  They still wanted to do pulled pork, but they wanted to make something that hubs and I would eat as well.  So, they made us our own little pot of the vegetarian kind.

It's even better than I remember.  Maybe it's the 6 long years that made it taste tangier, sweeter, and even more delicious.

Apparently my parents were betting on what my reaction would be to the pulled "pork".  My mom won with something like "This is the best food I've ever tasted."  So, I decided that it was blog-worthy.

Even pups wanted to give it just a little lick taste.


 PS: It's even good for non-New Years' Day meals.  I believe it may have welcomed both January AND February in our house =)


Vegetarian Pulled Pork Sandwiches
Recipe adapted from Chookie Chookie Grandma
Serves 6

Ingredients:
  • 1 c ketchup
  • 1/2 c brown sugar
  • 2 tbsp vinager
  • 1 tbsp Worcestershire sauce (vegetarian, if you don't eat fish) 
  • 2 tbsp yellow mustard
  • 1 bag (12 oz) of vegetarian "beef" crumbles (I prefer Morningstar)
Combine the ketchup, brown sugar, vinegar, Worcestershire sauce, and mustard in a medium-sized pot.  Allow it to cook for 5-10 minutes over medium heat, stirring often.  Add the "beef" crumbles and continue to cook it over medium heat for another 10 minutes, until the "beef" is hot.  Serve as a sandwich (or open-faced) sandwich.
