oatmeal raisin granola bars

We've been making these granola bars an awful lot lately.  They're quick and easy, make your house smell delicious, and are the perfect lunch snack.

The other day, though, I decided that we needed to change things up a bit.  The peanut butter/chocolate combo is amazing, but it was seriously starting to lose its novelty.  So, I played around with the recipe a good bit and came up with this.

You can't really go wrong with oatmeal raisin cookies.  These bars have all that mouthwatering taste of their cookie sister, but they're soft and gooey.  They're packed with healthier choices than most treats (oats, flaxseed, raisins, honey), but they definitely still taste decadent.

You likely already have the necessary ingredients in your pantry and it's MLK Day, so I know there's a good chance you probably have the spare 5 minutes it'll take to make these.  Go for it!!

Oatmeal Raisin Granola Bars
Makes 9 bars

  • 2 1/2 c quick rolled oats
  • 1/2 c rice krispies
  • 1/2 c raisins
  • 1/2 c brown sugar
  • 2 tbsp ground flaxseed
  • 1/4 c butter, melted
  • 1/3 c honey
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 eggs
Preheat oven to 350 degrees and grease a square baking pan.  Combine all of the ingredients in a large bowl and mix well.  Smooth the mixture into the greased baking pan.  Bake for about 20 minutes, until the edges start to brown.  Remove pan to a cooling rack and allow to cool about 5 minutes before cutting.  Cool completely before removing bars from pan and enjoying.
