breakfast casserole with alexia potatoes

I'd been planning on baking up a breakfast casserole for a while now and as luck would have it, as part of the Foodbuzz Tastemaker Program, I received Alexia Oven Fries to use in a recipe.  I figured their olive oil, rosemary and garlic fries would work perfectly in this recipe.

I originally was thinking of topping this casserole with guacamole, but once we tried it, we realized that the fries and the soy-sage gave the dish all the seasoning it needed.  That means more guacamole left for our tacos this evening!

I love Chipotle.  It's definitely my fast food of choice.  And it's even better now that they have brown rice.  Before, it was amazingly good.  Now, it's unbelievably good.

I have been getting vegetarian burritos/tacos/bowls there since well before I was a vegetarian.  Solely because of the guacamole.  It's pretty much the world's perfect food.  (I know avocados have a lot of calories, but that's because of all the good fats they have...so don't judge, just dig in)

You haven't lived until you've had good guac.  Chipotle has good guac.

warm pear crisp

I was never a big pear fan.  I'd eaten pears in fruit salads, mainly.  And if I were the one making the fruit salad, they would've "accidentally" been left out.  I was never one to eat a pear for pear's sake.

(Thinking about all those fruit salads, I honestly don't know if I had ever had a fresh pear until now...which may explain my dislike for them.)

So, last week I decided to give them a chance.  There's only so many fruits that are available fresh during the winter and most of them are citrus fruits.  I love my oranges and tangerines, but at some point, you just need something different.

blood orange yogurt bread

Are blood oranges a new thing?  They seem like some sort of fad fruit that appeared one day out of nowhere (like the Snuggie or Ugg boots of the produce world).  Or maybe it's just that their popularity appeared out of nowhere.  Either way, now they're everywhere.

They're in season now too, so you shouldn't have much trouble finding them.  They look fairly unassuming from the outside...like a normal orange with a few darker spots on the rind.  But inside...

vegetarian peanut butter chocolate rice krispies

Random fact of the day: normal Rice Krispy treats aren't vegetarian.   Marshmallows have gelatin hidden in them. (In fact, many random things do...from many yogurts to frosted Pop Tarts to frosted shredded wheat cereal.)

For a few years after becoming vegetarian, I thought Rice Krispy treats were completely out.  Sadness.

This recipe brings me back to my 4-year stint in the South.  Not just anywhere in the South.  Athens, Georgia.  It's most definitely the coolest college town out there.  What's not to love?

They also happen to be the home of the world's coolest mascot.  (UGA may not win the health contest, but he sure wins the cuteness contest in the mascot world!)

I've been thinking about veggie paninis for a while now.  For my birthday a couple months ago we went to Melt (an awesome grilled cheese restaurant that makes fancy sandwiches with everything from crab cakes to meatballs and pierogies).

They make pure inspiration in the form of a sandwich.

It's my sister's birthday today.  (Happy Birthday!)  We went to visit her to celebrate.  (Man, am I starting to feel old!)  We played Apples to Apples and ate some awesome Italian food.  (Isn't food always the center of any party?)

When I asked my sister a few weeks ago what she wanted for her birthday, the only thing she could think of was a cake.  She chose a vanilla cake with vanilla frosting, so that's what you'll find here.  It sounds simple and plain, but when it's done right, it's the best.

I don't like the smell of flowers.  I'm not into glittery jewelry.  Giant stuffed bears holding hearts...I can live without.  (My husband has gotten to the point where he has simply given up on Valentine's Day.  Can you blame him?)

Despite my disinterest in most things Valentine-y, I'm not a total Valentine's Day Scrooge.  Valentine's Day is a perfectly lovely holiday but should be limited to things like berries and chocolate.

So, I hear there's a Super Bowl coming up.  Which pretty much means a day of the Puppy Bowl on Animal Planet and a night of good commercials.  Not much else.  Especially if you live in Cleveland. 

But, besides the pooches and the grown-up Ferris Bueller commericals, there is one more good thing about the Super Bowl...food.

vegetarian "meat" lasagna

I love lasagna.  But there's just one problem with it.  Meat.

I'm pretty sure if you look up the definition of "lasagna" it will say something like "beef or sausage layered between pasta with a little bit of marinara sauce and cheese".

That's a problem for a vegetarian...but luckily there's a solution!
