mexican hot chocolate

I've been more more ADD than normal lately.  I pull up my work email and realize that I got an email from the house title company.  Work email clearly lost out.

I start grading an online quiz and have a decorating brainstorm and suddenly the quiz is left half graded.  Pinterest has been taking over my life a little.

This morning I was doing laundry (in order to avoid doing real work for as long as possible), I started doing some lesson planning, and suddenly I realized that I hadn't yet come up with a Mexican hot chocolate recipe.

I'm in charge of making the holiday drink for our department Christmas party, but I had yet to find a recipe.  So, mid-laundry and mid-lesson planning, I found a Mexican hot chocolate recipe.  My clean laundry sat in the dryer and my (partial) lessons sat on my desk as I made this warm, delicious drink. 

This hot chocolate is thick and rich and amazing.  It's also pretty darn sweet.  (The next time I would start with only 1/4 cup honey, depending on who I was making it for.)  The cinnamon and cayenne pepper add a bit of spice.  It will warm your belly and keep your mind off of other distractions, like work and real life responsibilities.

Mexican Hot Chocolate
Makes 2-3 cups
Recipe from comfy belly

  • 1 c milk
  • 1 c water
  • 1/2 c honey (or less, to taste)
  • 1/4 c cocoa powder
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • Pinch of cayenne pepper
Heat all of the ingredients in a saucepan over medium heat while whisking for about 5 minutes, until hot but not yet boiling.  Serve warm.
