My husband finished his first marathon yesterday. I'm so proud of him! He did great in some unbearably warm weather. My parents and I got really sunburned just from cheering. I don't know how he (and all the other runners) did it.
We've been out to eat a lot lately. We've been carbo-loading (okay, I didn't have to do it, but how can you turn down pasta, pizza, and rice?). We stopped at Chipotle after the race. Then we got Sonic milkshakes. It's not been the healthiest week.
So, last night (as we were finishing our milkshakes) we decided to go back on "The Diet".
"The Diet" doesn't mean counting calories or fat by any means. It means going back to what we try to eat everyday--lots of fruits, veggies, and whole grains while not overloading on sugar or salt. It's no big secret.
Over the past year and a half my husband and I have both lost weight (he lost much more than me) from following "The Diet" and exercising. We eat unhealthy sweets and treats as snacks sometimes, because we believe that completely depriving ourselves will make us want them more. But we don't go out to eat much, so most every meal is controlled and pretty healthy.
So, today was Day 1 back on "The Diet" after the ugly week last week. I've got whole grain bread rising as I type, and we snacked on this ranch dip this afternoon. Ranch always makes veggies more tasty (not that they're not tasty to begin with). This version doesn't require mayonnaise or sour cream, it has extra protein, and it is fat-free (for you fat-gram-counters out there). It really couldn't be easier.
Healthy Zesty Ranch Dip
Makes 1 cup
- 1 cup plain, non-fat Greek yogurt (all of the Greek yogurt I've seen is vegetarian-friendly, whereas most regular yogurts aren't)
- 1 tbsp Hidden Valley Ranch seasoning
