I've had several requests for vegan bakery recipes in the past few months. I know good vegan baked goods exist (The Grit in Athens, Georgia is proof; they make some of the BEST cake I've ever tasted, vegan or otherwise). I'm just personally not very versed in vegan baking, but would love to learn.
So, when we walked into the Cleveland Public Library this past weekend, 150 Best Vegan Muffin Recipes was the first thing that caught my eye. I'm sure I was quite the sight as I nearly ran into bookshelf after bookshelf as I flipped through the book while trying to stay near my husband (since that library is so huge that you literally could get lost in there). Every single muffin recipe just looked soooo good.

Panera is an little addiction of mine. The hazelnut coffee, the veggie sandwich, the cinnamon bagel, and the bread bowl. Oh, the bread bowl...definitely my favorite and clearly the inspiration here. The only thing better than a warm bowl of soup is soup surrounded by an edible bowl made of bread. Bread makes everything more delicious.
The 5 minute light whole wheat artisan bread is the base for this (I adjusted the recipe slightly...see below), so it's really fast and easy to make. It looks way more impressive than it should for the amount of work required. These bread bowls would be great for a small dinner party, especially since everything can pretty much be made ahead of time.

Yesterday was Administrative Professionals Day. We are lucky enough in our department to have an amazing administrative assistant. She takes care of all of our daily disasters as if they were nothing at all. She was the one to save the day when I didn't have enough chairs for all the students in my classroom the first day and when we had the spark situation. She does pretty much everything.
She definitely deserved some chocolate chocolate chip cookies, so that's what I brought her. She liked them, even at 7:45 in the morning. (Really, is there a bad time for chocolate?)

It's the last week of classes. "Summer" officially starts in just over a week. It's weird that this semester is so quickly coming to an end....especially since there was a threat of snow yesterday. I'll stop complaining about the crazy Ohio weather soon, promise. I'm still
Speaking evaluations are done, quizzes and compositions are graded, and now I wait. It's the calm before the storm. Fellow educators know exactly what I'm talking about...the impending pile of final exams (henceforth simply referred to as The Stack) that is looming over this otherwise pretty relaxed week.

Happy Earth Day! (First there was Pineapple Upside Down Cake Day and now this...it's been quite a week, I know!) It's a day to remind us about the responsibility we have to take care of this little planet we call home.

Random fact of the day: tomorrow is National Pineapple Upside Down Cake Day! In honor of the holiday I decided to make a breakfast-y twist on the classic dessert.
My first attempt at pineapple upside down pancakes was a bit of a failure. Crushed (canned) pineapple, not enough cherries, and brown sugar mixed in the batter created a pretty bland cake. They were completely unacceptable for such an important national holiday!

As I've mentioned before, Middle Eastern food is one of our favorites. It's light, nutritious, and very vegetarian-friendly. My dad introduced us to tabouli about a year ago. Ever since, every time we go out for Middle Eastern food, it's become a necessary staple.
A couple weeks ago, my husband and I went out on a double date with a friend I've known literally my entire life (we were born one day apart and were next door neighbors) and his wonderful fiancé. We, of course, needed to order some tabouli for the table.

Are you ready for a story? I thought so.
So, yesterday I was getting ready to teach subjunctive to my last Spanish class of the day; I was returning papers and talking to a few students before class started. A couple students were rearranging chairs and desks in the most awkward (windowless) classroom you can imagine.
Suddenly, out of the corner of my eye I see sparks. Actual sparks. And not little, either. Probably like a toaster exploding in the movies, or at least something toaster-sized.

Little did we know that two days after celebrating Easter and about a month since nearly melting in my classrooms from the unbearable heat, winter would decide to return to Northern Ohio.
This morning was beautiful. It was cool, partially cloudy and pretty much perfect. And my husband and I both had off at the same time and had absolutely no plans! That hadn't happened in quite a while. We took it slow this morning by sipping coffee and cuddling on the couch with the pooch. By the time we had gotten ourselves together, it was already early afternoon.

Easter is finally here! I love Easter, especially the midnight mass with all the candles, the Hallelujah Chorus, and the hope of a new beginning. It's really one of my favorite days of the year.
Also, it marks my survival of the past 40 days without listening to the radio in the car. Yep, that's what I gave up this year for Lent. It wasn't always easy listening to nothing but my own thoughts at 6:30 am each morning for the long car ride to work.

Cinnamon rolls bring back so many memories. They mean lazy Saturday mornings with family and cartoons. They mean Christmas mornings with grandparents. They mean sleepovers with friends.
They mean family and holidays and love. It just so happens that Easter is in a few days. These rolls want to be on your breakfast table. They may even compete with the Easter Eggs hidden all around the house.
(Sneakily) they're 100% whole wheat. They're some of the best whole wheaty things I've ever tried. The recipe makes a ton of them. Don't halve it. It will go.

I was looking for a new breakfast food and came across a pretty picture of an egg in a mini bread bowl. I couldn't NOT try this. So simple, so easy, and so perfect for the welcoming of April.
How is it already April? Really.
The year's flying by...I think I'm getting old. Old people always talk about how quickly time flies. I'm talking about how quickly time flies. Therefore, I'm old.
