no-bake chocolate peanut butter oat bars

Excuse my lack of posts this past week.  It's been a little crazy here lately...despite the whole Spring Break thing.

Last weekend my husband's family came to town to visit.  We went to Melt and spent an afternoon at Lake Erie.

Monday included laundry, packing, and dropping the dog off at my parent's house.



We spent most of the week in Cooperstown, NY at the National Baseball Hall of Fame and made a side trip on the way home to Niagara Falls.  It was a much needed mini-vacation for both of us.

Yesterday, my husband and I were at the park taking Cooper for a walk.  When we got back to the car, my phone had a missed call and a "Call me!!" text from my sister.

Her boyfriend proposed!  My little sister's engaged!  We're super-excited for them! (If you couldn't tell from the annoying overuse of exclamation points!)

For a wonderfully busy week, try out these bars.  They're a healthy (whole grain, vegan, gluten-free) way to take care of your chocolate fix and they don't even require you to turn on your oven.  Love it!

No-Bake Chocolate Peanut Butter Oat Bars
Recipe from 5 Corners Bed and Breakfast
Makes 6 bars

Ingredients:
  •  2 tbsp chocolate chips (vegan chips, of course, to make it vegan)
  • 2-3 tbsp peanut butter
  • 2 tbsp milk (or soymilk)
  • 1/2 c oats
  • 1 tbsp ground flax seed (or more chocolate chips, oats, seeds, etc)
Measure chocolate chips, peanut butter, and (soy)milk into a small microwave-safe bowl.  Microwave 30-45 seconds, stirring every 15 sec, until melted.  Mix in oats and other dry ingredient.  Mixture should be dry.  Press mixture into a plastic wrap-lined bread pan.  Place pan in fridge for about a half hour, until hardened.  Carefully remove plastic wrap and cut into 6 bars.


Peanut butter will always get Cooper's attention

  2. I made these tonight. They were super easy, super fast, and super tasty! I'll make a larger batch next time, but now I have a go-to recipe for snacks that I can do in between chores and taking care of babies. Thanks!
