Is it too early to celebrate St. Patrick's Day?  If it is, close this post and pull it up again this coming weekend.

But, if you're like me and happen to be on spring break and happen to have some leftover chocolate cupcakes from a weekend birthday celebration, this recipe's for you.



The fluffy, coffee-flavored, Irish Cream frosting works great with the classic chocolate cupcake.   This would be great for a St. Patrick's Day celebration.  Or for a spring break celebration.  Whatever the case may be, these will be sure to please.

(Please note: This recipe is NOT for the kiddies.  There's only about a teaspoon of alcohol per cupcake, but please stick with the cream cheese frosting for them.)


Bailey's Irish Cream Frosting
Makes enough frosting for 12 cupcakes

Ingredients:

• 1 stick of unsalted butter
• 2 1/2 c powdered sugar
• 1/4 c Bailey's Irish Cream (4 tbsp)

Put the stick of butter in an upright mixer and alternate adding about 1/2 c powdered sugar and 1 tbsp Irish Cream at a time while mixing.   Once all of the ingredients have been added, mix on high for about 5 minutes until light and fluffy.  Refrigerate until ready to use.  Finish off some awesome chocolate cupcakes with this frosting and some chocolate garnish.
