raspberry chocolate muffins

I don't like the smell of flowers.  I'm not into glittery jewelry.  Giant stuffed bears holding hearts...I can live without.  (My husband has gotten to the point where he has simply given up on Valentine's Day.  Can you blame him?)

Despite my disinterest in most things Valentine-y, I'm not a total Valentine's Day Scrooge.  Valentine's Day is a perfectly lovely holiday but should be limited to things like berries and chocolate. 

Yep, I can do berries and chocolate any day; Valentine's Day is a wonderful excuse to indulge.  Here's a perfect Valentine's Day breakfast of raspberry chocolate muffins.

Make some stuffed peppers for dinner followed by a delicious strawberry-covered chocolate cupcake (notice the berry and chocolate theme continue) and you'll be set for Valentine's Day...whether or not you're interested in diamond necklaces and roses.

Raspberry Chocolate Muffins

Recipe adapted from Mystery Lovers' Kitchen
Makes 6 muffins

  • 2/3 c chopped red raspberries (I used frozen ones)
  • 1 tbsp sugar
  • 1 egg
  • 1/4 c sugar
  • 2 tbsp vegetable oil
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/3 c milk
  • 1 c flour
  • 1/2 tsp baking powder
  • 1/2 ts baking soda
  • 1/4 c chocolate chips
Preheat oven to 350 degrees.  Line a muffin pan with 6 muffin cups.  Chop raspberries into small pieces and place them in a small bowl with 1 tbsp sugar.  Allow them to sit for a couple minutes to get sweet and juicy.  Put egg, sugar, oil, vanilla, and salt in a medium bowl and whisk ingredients together well.  Add the milk and raspberries and stir.  Add flour, baking powder and baking soda.  Stir together until the wet and dry ingredients are starting to incorporate.  Then, add chocolate chips and mix them in.  Be sure not to over-mix the batter.  Spoon batter equally into the 6 muffin cups.  Bake for 25-30 minutes until golden brown.  Allow muffins to cool 5 minutes in the pan.  Remove them and let them finish cooling on a wire rack before enjoying.
