artichoke dip

So, I hear there's a Super Bowl coming up.  Which pretty much means a day of the Puppy Bowl on Animal Planet and a night of good commercials.  Not much else.  Especially if you live in Cleveland. 

But, besides the pooches and the grown-up Ferris Bueller commericals, there is one more good thing about the Super Bowl...food.

Junk food.  Snack food.  You know...the delicious things you try not to eat on an average, non-Superbowl day that are somehow forgiven and allowed one Sunday in February.

This includes artichoke dip.

Enjoy this dip during the game.  Watch the commercials.  Go to bed happy no matter who wins.

Artichoke Dip
Recipe from mom-in-law

  • 1 c artichoke hearts, cut into small pieces (I used 1/2 of a 9 oz package of frozen artichokes, but you can also use jarred artichoke hearts)
  • 1 c light mayonnaise
  • 1 c grated parmesan cheese
  • 1 clove garlic, minced
  • Paprika
Preheat oven to 350 degrees.  If you're using frozen artichokes, take half a 9 oz package of artichokes and put it in a small bowl to microwave for 1 minute.  Once artichokes are soft, cut them into small pieces.  If you're using jarred artichokes, drain them well, measure, and chop.  Combine artichokes, mayonnaise, parmesan cheese, and garlic in a medium bowl and stir well.  Spread mixture evenly into a glass pie dish and sprinkle with paprika.  Bake for 25-30 minutes.  Serve warm with cubes of bread (we had it with garlic sourdough bread and it was delicious!), crackers, tortilla chips or pita chips.
