quick banana oat bars
Alright. I know it's the beginning of a new year. I know you're probably trying to watch what you eat. And, I know that the recent posts of cinnamon french toast, peppermint hot chocolate, and kolachi haven't helped the cause.
So, to make it up to you, here's a really fast and easy snack to make that won't break any resolutions. In fact, it's healthy. I know it's been a while since I've posted (or eaten) anything remotely wholesome. But, trust me and make some of these banana oat bars. I did. They make me feel healthy.
It's all about balance, after all.
Quick Banana Oat Bars
Recipe adapted from Friesen Cold
-2 large bananas
-2 c rolled oats
-1 tsp vanilla
-a chookie chookie or two of cinnamon
*easily adjust recipe to taste by adding chopped nuts, chocolate chips, flax seed or peanut butter
Mash bananas well in a medium-sized bowl. Add other ingredients and mix everything together with your hands. Press mixture into a greased 9x9 baking dish. Sprinkle with more cinnamon, if you like. Bake at 350 degrees for about 30 minutes or until the edges are starting to crisp. Allow to cool well before cutting. Cover or wrap with plastic wrap and enjoy within a couple days.
