peanut butter kiss cookies

Let the cookie-fest continue!  Today's cookie is one of my personal favorites, peanut butter kiss cookies.  They are definitely a holiday tradition in our family.  My mom always made them for Christmas when we were little.  Even when we were too young to help with the baking itself, my sister and I loved adding the kiss at the end.

This year, sis and I made the cookies ourselves.  They turned out just as we remembered...delicious!

Peanut Butter Kiss Cookies
Recipe adapted from Good Housekeeping

-1 bag of Hershey's Kisses
-1/2 c vegetable shortening
-3/4 c. peanut butter
-1/3 c sugar plus more to roll dough in
-1/3 c light brown sugar
-1 egg
-2 tbsp milk
-1 tsp vanilla
-1 1/2 c flour
-1 tsp baking soda
-1/2 tsp salt

Beat shortening and peanut butter in a large bowl.  Add 1/3 cup each of white and brown sugars.  Beat until fluffy.  Add the egg, milk, and vanilla, mixing well.  In a medium-sized bowl, stir together flour, baking soda and salt.  Gradually add dry ingredients to wet ingredients, incorporating well as you go.  Shape dough into 1" balls, roll them in sugar, and place them on an ungreased baking sheet.  Bake cookies 8-10 minutes at 375 degrees until lightly browned.  While cookies are baking, unwrap Hershey Kisses, one per cookie in the oven.  When the cookies are done baking, take them out, and immediately press a Hershey Kiss in the center of each cookie.  Allow cookies to cool on a wire rack.  Makes 3-4 dozen cookies.
