Trying to find a simple granola recipe was not only difficult, but really impossible. So, I made up my own.
This is about as simple as it gets in terms of granola. Feel free to add your random bits of dried fruit, nuts, and grains to this basic recipe as you please. But, I'll enjoy mine just like this...to top yogurt, vanilla soy milk, warm homemade applesauce, or even ice cream. After all, simple doesn't have to be boring =)
No Frills Granola
-6 c rolled oats
-1/2 c flax meal
-1/2 c honey
-1/3 c vegetable oil
-2/3 c chopped almonds
-1 tsp vanilla
-a chookie chookie of cinnamon (1/4-1/2 tsp)
Chop up the almonds. Add them to a big bowl with all of the other ingredients. Mix well until all ingredients are moist and incorporated. Pour mixture onto a baking sheet and bake for about 45 minutes at 325 degrees, mixing a couple times during the baking process. Store granola in an airtight container and enjoy over the next week or two.
